Menu - Our traditional organic cuisine
All our meals are prepared traditionally from organic food!The Tara canyon, with massives of Durmitor, Maglic, Zelengora and the whole area of Old Herzegovina has been home of traditional cuisine for centuries, based on healthy, organic food. All the food we offer in our center is made in the canyon or nearby, the same way our ancestors did it, in the area which is the last oasis of untouched nature in Europe.
Organic food
All the ingredients have been grown locally in natural, organic surroundings. Our traditional recipes are what makes us special and different form the others. Our arrangements include three full meals a day and by staying with us you will have the opportunity to enjoy specialties from our organic kitchen.

The most famous speciality of this area old cream cheese. It is made in huts of fir, covered with wooden shingle, kept in wooden vats or sheep skin. The cheese is collected, in the summer it is golden yellow. It has strong taste and is recommended with baked potatoes, hot bread, muffins-priganica etc. We serve it mainly for dinner and breakfast.
Smoked cheese is made of cow or mixed milk and is smoked in huts with smoked meat, on the fire of beech wood. We serve it for beakfast. It is recommended with ustipci-priganice. Older goat cheese is full-fledged, golden, hard and with a lot of fat, goes well with homemade smoked ham, covered with olive oil. We serve it as hors d'oeuvre.
LOCAL, SMOKED MEAT IS A REAL SPECIALITY OF THE AREA GORNJA DRINA AND OLD HERZEGOVINA!
Meat is covered with sea salt and mashed garlic and then dried in huts on beech and hornbeam woods. Often, some herbs or spruce are added on live coals, which give the meat a fantastic aroma. Our dried, smoked meat, bacon, ham and sausage are served as hors d’oeuvre and for breakfast.
The place where the rivers Tara and Piva make the Drina, is known for a long time for the best lamb and kid, made in our center with vegetables under the metal pan or on the skewer. We serve lamb for lunch, after veal soup, with young nettle.
For dinner, you can eat homemade polenta, made from corn, minced in watermill, covered with homemade butter-fay and cream cheese. Polenta is served with yogurt.
Grilled meat is also very popular in these parts, so we offer on the menu. As long as it is remembered, these areas are rich in wildlife, and hunting is an essential part of our tradition! So we will serve you meat rolls in Rastan or cabbage with game meat or other specialties of this meat! Among other dishes of meat and “mrs”, we offer a variety of vegetable dishes, so that the rich menu and wait for all vegetarians or vegans!
The best known is pear brandy made of wild pears - “divurica”, plum brandy made of Drinska Požegača plum, and brandy. You will be served the highest quality wines of Herzegovina, local “Vranac” and golden yellow local “Žilavka” are the most famous and our house wine, but you will have the chance to try the others as well!
